We believe in the magnitud of freedom and the fact of following your instincs and ideas; what you truly feel and believe that can be acomplish. To us the cuisine is creativity, surprise, harmony, incitement,poetry, fantasy, culture and great taste. Deconstruction is what we love doing, always searching for new flavors, textures, researching and experimenting. Our creation are not confined to the sense of taste, we look forward to satisfy on the same way the sense of sight, hearing, touch and smell, being this way how we deviate from the clasic structure and look for new alternatives between the sweet, salty, sour and bitter creating like this a great and full experience.

Most of our ingredients are of local origin, our cuisine is better known as “cocina de autor”, where the cook-chef goes beyond cooking a product, look for new flavors, complementing each other, textures and colors... being the presentation of the dish a way to improve the product, gaining this way a representation of what we could call ephemeral art.

"Recently I was in Oaxaca for a friend's wedding. It was one of the most amazing times I've ever had on vacation. I stayed at an amazing B & B called Casa Crespo. However I later found out that it was also home to one of Oaxaca's hidden gems, the restaurant El Teatro Culinario. What a mind blowing experience! The Chef / artist extraordinaire, Jose Luis, is talented beyond my comprehension. I live in New York so I have access to some of the world's top chefs, and Jose Luis if he ever decides to open a restaurant in New York, would be a force to be reckoned with. I cannot stop talking about what he's able to accomplish with his creations.
